Paleo recipe - cauliflower pizza

Do you fancy a pizza?

Would you have expected it to be possible to eat pizza on a Paleo diet? We have a delicious pizza option for you that you can also eat while following the Paleo diet. We'll tell you what you need and how you can make this delicious pizza with a cauliflower pizza base. You will also find a recipe video at the bottom of the article.

Ingredients for 1 pizza tray (approx. 4 portions):

for the base:

1 cauliflower

4 eggs

4 tablespoons coconut flour

1 teaspoon oregano

1 pinch of salt

2 tablespoons olive oil

for the topping:

250ml strained tomatoes

1 teaspoon of oregano

1 teaspoon thyme

1 pinch of salt

a little pepper

1 bunch of fresh rocket

4-6 slices of Parma ham

40g pine nuts

5-7 dried tomatoes

Preparation:

Pizza base:

Preheat the oven to 200°C. Wash the cauliflower and remove the stalk and leaves. Chop the cauliflower florets (using a food processor if possible) until they are about the size of grains of rice. Then mix the cauliflower mixture with the eggs, coconut flour, oregano and a pinch of salt. 

Brush a baking tray lined with baking paper with 1 tablespoon of olive oil. Then spread the cauliflower mixture evenly over the baking tray and brush the edges of the mixture with another tablespoon of olive oil. Place the cauliflower pizza base in the preheated oven for approx. 15-20 minutes. 

Tomato sauce:

Mix the strained tomatoes with oregano, thyme, salt and pepper and spread the sauce evenly over the pizza base (after the base has baked for 15-20 minutes). Put the pizza, including the tomato sauce, back in the oven for another 3-5 minutes.

Serve:

Take the pizza out of the oven (careful, it's hot!) and top it with rocket, chopped sun-dried tomatoes and pine nuts after Parma ham.

Preparation:

Puree the peeled banana and berries in a blender. Add the coconut water and blend the puree again. If the smoothie is too thick, you can add a little more coconut water. Pour the smoothie into a nice glass and garnish with a few fresh berries if desired. Enjoy the taste!
