Asparagus salad with strawberries and caramelized walnuts

A tasty and fresh salad on a warm summer's day is the perfect meal. Whether for lunch or as a light meal in the evening, you can't go wrong with this strawberry and asparagus salad. The fresh summer salad is also perfect for a juice cleanse preparation and can also be incorporated into a healthy and conscious diet afterwards. In this article, you can find out which ingredients you need and how you can prepare the salad super quickly and freshly. Ingredients (4 portions):

2 bunches of green asparagus

400g strawberries

125g lamb's lettuce

100g blueberries

20g mint

200g vegan feta

4 tbsp olive oil

salt & pepper

4 tbsp walnuts

1 tbsp date syrup

3 tbsp light balsamic vinegar

1 tsp honey

1 tsp mustard

erythritol

Preparation:

    1. Wash the asparagus, peel the lower third and break off the woody ends
    2. Cut the asparagus spears into thirds with a slightly diagonal cut
    3. Wash the strawberries, remove the stalk and cut them into quarters
    4. Wash both the rocket and the blueberries
    5. Clean the mint under running water, pluck the leaves from the stems and roughly chop them
    6. Crumble the feta in your hands
    7. Heat about 1 tbsp olive oil in a pan and fry the asparagus spears in it
    8. Season with salt and pepper
    9. In another pan, fry the walnuts for 2 minutes without adding any fat
    10. Sprinkle with erythritol and caramelize for approx. 3 minutes
    11. Place the nuts on baking paper and chop them into large pieces once they have cooled down
    12. Mix 2 tbsp olive oil, balsamic vinegar, honey and mustard in a bowl
    13. Season with salt & pepper
    14. Mix the asparagus, strawberries, lamb's lettuce, blueberries, mint and feta with the dressing
    15. Top the salad with the caramelized walnuts
