Ingredients (4 portions):
2 cups organic millet
1 onion
1 garlic clove
2 tbsp olive oil
1 tsp curry powder
0.5 tsp ground turmeric
4 cups of water
120 g unsweetened coconut milk
salt, pepper
300 g brown mushrooms
75 g fresh baby spinach leaves
chili powder
Preparation:
- Rinse the millet in a sieve until lukewarm and then drain it
- Peel the onions and finely dice them, just like the garlic
- Heat 1 tbsp oil in a pan and sauté the garlic and onion until translucent
- Sprinkle with curry and turmeric and sweat the spices in the pan
- Add the millet and deglaze with water and coconut milk
- Season with ½ tsp salt and a little pepper
- Bring everything to the boil and then simmer over a medium heat for approx. 5 minutes
- Then leave the millet to soak for approx. 20 - 25 minutes at a low temperature
- In the meantime, clean the mushrooms and cut them into fine strips
- Wash the spinach and shake it dry
- Heat 1 tbsp of oil in a large pan, fry the mushrooms and season with salt & pepper
- Add the spinach and approx. 3 tbsp water
- Put a lid on the pan and let the spinach simmer until it collapses
- Fold the spinach and mushroom mixture into the millet and season with pepper, salt and curry to taste
