Vegan vegetable paella

A little bit of Spain in your own kitchen. No problem with this delicious paella recipe. With just a little effort, you can prepare this vegan vegetable paella yourself and bring Valencia's national dish into your home. Ingredients (4 portions):

2-3 tbsp olive oil

1 onion

3 garlic cloves

1 small leek

1 red bell bell pepper

1 green bell pepper

200g paella rice

480ml vegetable stock*

2 tomatoes chopped

200g tofu

150g peas

1 jar of artichoke hearts 165g drained weight

10 Kalamata olives

Spices:

1 teaspoon paprika powder*

1 1⁄2 tsp turmeric*

1 sachet saffron powder 0.1 g

2 tbsp tamari sauce* or soy sauce

Salt and pepper to taste

Topping:

1 bunch of parsley

1 organic lemon cut into slices or quarters

sesame seeds* optional

Preparation:

  1. First peel the onion and garlic and cut both into small cubes
  2. Then heat 1-2 tablespoons of oil in a pan and fry the onions and garlic in it
  3. Meanwhile, cut the leek into rings and the bell pepper into cubes. Then add both to the pan together with the rice and sauté for 2-3 minutes
  4. Then add the saffron, 1 teaspoon of turmeric and paprika powder and deglaze with the vegetable stock
  5. Now add the rest of the vegetable stock and the tomatoes, cover the pan with a lid and allow the contents of the pan to simmer for approx. 20 minutes until the rice absorbs the liquid 
  6. Meanwhile, press the tofu dry, cut into small cubes and fry in oil until golden brown on both sides
  7. Season with 1/2 teaspoon of turmeric and deglaze with the tamari sauce
  8. Mix the tofu, peas, artichoke hearts and olives into the paella and leave to simmer for a few minutes
  9. Then top with lemon, parsley and sesame seeds
