This fresh salad with beetroot and couscous ensures variety in your everyday nutrition. It is super fast and easy to prepare and only needs a few ingredients. Ingredients (4 portions):
150g beetroot
125g couscous
175ml vegetable broth
2 ½ tablespoons of lemon juice
3 tablespoons of parsley
2 tablespoons of mint
½ teaspoon salt
pepper
150g vegan feta cheese
300g cherry tomatoes
3 spring onions
Preparation:
- Put the couscous in a large bowl, pour over with the boiling broth and let it pull it for 5 - 10 minutes. Stir around in between with a fork
- Add the lemon juice, the cut herbs, pepper and salt and mix everything carefully
- Cut the vegan feta cheese and the beetroot into cubes
- Add both together with oil, tomatoes, olive oil and spring onions and lift the ingredients
- Taste with pepper and salt
