Asian raw vegetable salad

Ingredients (serves 2):

1 red pointed bell pepper

125g Chinese cabbage

1 organic cucumber

½ red radish

30g radish sprouts

1 lime (juice)

4 tbsp coconut milk

1 tbsp peanut butter

½ tsp sambal oelek

½ tsp agave syrup

2 tbsp rapeseed oil

2 tbsp roasted peanuts


Preparation:

  1. First wash, clean and finely slice the vegetables, wash and drain the sprouts

  2. Now mix together the lime juice, coconut milk, peanut butter, sambal elek, agave syrup, oil and salt

  3. Finally, mix the salad with the dressing and arrange on a plate

  4. Chop the peanuts and sprinkle on top as an option before serving

  5. Enjoy!
