610ml water
1 onion
2 carrot
1 leek
½ celery root
3 bay leaves
juniper berries
1 bunch of curly parsley

Preparation:
- First cut the leek into slices and finely chop the onion
- Wash the celery and carrots and cut them into small slices
- Put the oil in a pan and heat it up
- Add the onion and vegetables and sauté in the oil
- Wash and toss the parsley and then finely chop it
- Add the parsley to the pot together with the bay leaves and juniper berries
- Bring the soup to the boil for approx. 25 minutes
- Season to taste with salt and pepper
