Ingredients (2 portions):
250g wide rice noodles
150g sugar snaps
2 tomatoes
1 cucumber
1 handful of Mu-Err mushrooms
1 bell bell pepper
1 carrot
peanut kernels
sesame seeds
Optional: Coriander
For the dressing:
Soy sauce
rice vinegar
lime juice
rice syrup
Large clove of garlic
Peanut oil
water
Preparation:
- First cook the rice noodles according to the packet instructions and set aside for the time being
- While the noodles are cooling, chop the vegetables and place in a bowl
- Now mix the soy sauce, rice vinegar, lime juice, rice syrup, garlic, oil and water together in a small bowl to make a sauce
- Then add the vegetables to the noodles, pour over the sauce and mix everything well
