Vegan glass noodle salad

Our vegan glass noodle salad is healthy, low in calories, fresh and super quick to make. This Asian salad not only comes with delicious Asian flavors flavors, but you can also fit it perfectly into the preparation time of your juice cleanse integrate it! Ingredients (2 portions):

250g wide rice noodles

150g sugar snaps

2 tomatoes

1 cucumber

1 handful of Mu-Err mushrooms

1 bell bell pepper

1 carrot

peanut kernels

sesame seeds

Optional: Coriander

For the dressing:

Soy sauce

rice vinegar

lime juice

rice syrup

Large clove of garlic

Peanut oil

water

Preparation:

  1. First cook the rice noodles according to the packet instructions and set aside for the time being
  2. While the noodles are cooling, chop the vegetables and place in a bowl
  3. Now mix the soy sauce, rice vinegar, lime juice, rice syrup, garlic, oil and water together in a small bowl to make a sauce
  4. Then add the vegetables to the noodles, pour over the sauce and mix everything well
  5. Bon appétit - so delicious!
