Ingredients (4 portions):

4 tubers beet (cooked)

250g vegan grill cheese

1 apple (tart)

2 tbsp peanuts

1 handful of pecan nuts

1 handful of cranberries

2 tbsp pomegranate seeds

organic lemon

Fresh parsley

Olive oil

½ tsp agave syrup

salt

pepper

1 tsp paprika powder

Preparation:

  1. First wash the apple and cut into small cubes about 1.5 cm thick together with the beetroot
  2. Next, cut the vegan grill cheese into small pieces and season with a little olive oil, paprika powder, salt and pepper
  3. Now place the grill cheese in a preheated pan and fry on all sides until golden brown, then set aside and leave to cool
  4. Then place the peanuts and pecan nuts in a pan without oil and toast a little
  5. Next, place all the ingredients in a bowl and season with olive oil, lemon juice, ½ tablespoon, salt and pepper
  6. Finally, arrange on a plate and top with fresh parsley
