Watermelon is the ultimate summer fruit and yet is often underestimated. Yet you can conjure up a super tasty and healthy salad from watermelon with just a few ingredients. Super fresh and fruity for the summer. With its great nutritional values, the salad is ideal for your juice cleanse preparation and post-processing and can also be integrated into your healthy everyday diet. Ingredients (4 portions):
2kg watermelon
1 cucumber
200g vegan feta
120g vegan mozzarella
1 large red onion
A few stems of fresh mint
50g pine nuts
Dressing:
6 tbsp olive oil
6 tbsp lime juice
1 tbsp date syrup
Some chili flakes
salt
pepper
Preparation:
- Peel the watermelon and cucumber, cut into cubes and place in a bowl
- Then peel the onion, cut into thin half rings and add to the bowl
- Cut the mint leaves whole or into fine strips and add to the bowl with the other ingredients
- Toast the pine nuts briefly in a pan without oil until they turn slightly brown, then set aside and leave to cool
- Cut the mozzarella into fine pieces, break the feta by hand and finally add both to the bowl
- Now mix all the ingredients together
- For the dressing, mix all the ingredients together well and then pour over the salad
