Veganer Wassermelonen-Feta Salat

Vegan watermelon feta salad

Watermelon is the ultimate summer fruit and yet is often underestimated. Yet you can conjure up a super tasty and healthy salad from watermelon with just a few ingredients. Super fresh and fruity for the summer. With its great nutritional values, the salad is ideal for your juice cleanse preparation and post-processing and can also be integrated into your healthy everyday diet. In this article, you will find the ingredients, preparation and the recipe video with our chef Michi. 

Ingredients (4 portions):

2kg watermelon

1 cucumber

200g vegan feta

120g vegan mozzarella

1 large red onion

A few stems of fresh mint

50g pine nuts

Dressing:

6 tbsp olive oil

6 tbsp lime juice

1 tbsp date syrup

Some chili flakes

salt

pepper

Preparation:

  1. Peel the watermelon and cucumber, cut into cubes and place in a bowl
  2. Then peel the onion, cut into thin half rings and add to the bowl
  3. Cut the mint leaves whole or into fine strips and add to the bowl with the other ingredients
  4. Toast the pine nuts briefly in a pan without oil until they turn slightly brown, then set aside and leave to cool
  5. Cut the mozzarella into fine pieces, break the feta by hand and finally add both to the bowl
  6. Now mix all the ingredients together 
  7. For the dressing, mix all the ingredients together well and then pour over the salad
