Vegan, super schnell und einfach lecker. Die Quesadillas stammen aus der mexikanischen Küche und werden mit viel Gemüse und Käse zubereitet. Das Rezept eignet sich nicht nur zur Vorbereitung auf Deine Saftkur, sondern auch ideal zur Nachbereitung. In diesem Beitrag findest Du das Rezept mit leckerer Jackfruit. Zutaten

    Whole grain wraps
  • 15 g
    Coriander
  • Limes
  • Cheese
  • Onion powder
  • 1 TSP
    Salts

    Oreganos

  • 1 TSP

    Olive oils
  • 280 g (drained weight)
    Jackfruit
  • 0.25 TL
    Salts
  • 0.5
    Peppers
  • 2.5 TBSP.
    Tomato paste
  • 2 TL
    Spice mixtures
  • 150 g
    Kidney beans
  • 100 g
    Maize
  • Crème fraîche
  • Coriander
  • Salt & pepper

Zubereitung

  • 1

    Dice the onion and garlic.

    Pour olive oil into a pan and gently fry the onion and garlic over a medium heat.

    Drain the jackfruit, squeeze it out and then roughly pluck it. Place them in the pan with the salt and fry them at a medium temperature for approx. 3 minutes so that the moisture evaporates.

    Dice the peppers into 1 cm cubes, add them to the pan with the jackfruit and fry for a further 2 minutes.

    Stir in the tomato purée and spice mix, allow to caramelize briefly and then add the beans and sweetcorn.

    Deglaze with 75ml water and leave to simmer for 3 minutes.

    Place the vegan crème fraîche in a bowl and season with salt and pepper.

    Add a little coriander and drizzle over a little fresh lime juice.

    Mix everything well and serve the dip with the quesadillas.

    Fill the quesadillas with a layer of cheese and vegetables. Place another layer of cheese over the vegetables, top with coriander and fold in half.

    Fry the quesadillas for 3 minutes in the pan with the lid on until golden brown. Turn the quesadillas and fry for a further 3 minutes without the lid.

    Serve with a lime wedge.
