Vegan summer salad with fried peaches

Would you like a little variety in your salad? Today we have a very quick and easy variation for you: One that combines "the best of both worlds", namely fruit AND vegetables. Ingredients (2 portions):

3 peaches

1 cucumber

1 avocado

150g cherry tomatoes

100g rocket

50g pumpkin seeds

30g walnuts

200g vegan feta cheese

olive oil

For the vinaigrette:

3 tbsp olive oil

1 tbsp balsamic vinegar

1 tbsp lemon juice

1 tbsp agave syrup

1 tsp mustard

salt

pepper

Preparation:

  1. First cut the vegetables into bite-sized pieces
  2. Wash the rocket and drain it well
  3. Then briefly roast the pumpkin seeds and walnuts with a little olive oil and a dash of agave syrup in a pan
  4. For the vinaigrette, mix the olive oil, balsamic vinegar, lemon juice, agave syrup and mustard and season with salt and pepper to taste
  5. Now wash the peaches, remove the stones and cut into wedges
  6. Then fry the peach slices on both sides for approx. 3 minutes until they get a nice color
  7. Finally, spread the salad on a large flat plate and garnish with the peaches, vegan feta cheese and nuts
  8. Finally, drizzle over the vinaigrette and enjoy the salad - bon appétit!
