Ingredients (2-3 toasts):
1 sweet potato
1 avocado
1 handful of tomatoes
Feta, crumbled
Spices (e.g. salt, pepper, garlic powder)
Preparation:

Cut the sweet potato into slices

Now you can place the slices on a baking tray, spray with olive oil and season with salt, pepper and garlic powder to taste

Roast the slices in the oven at 200°C for approx. 20-25 mins. until they are browned

While the sweet potato slices are in the oven, halve the avocado and remove the stone. Cut the flesh into small pieces and mash with a fork until it has a creamy consistency

Cut the tomatoes into small pieces and bSpread the sweet potatoes with the avocado cream

You can then top the slices with the tomato pieces and crumbled feta
