Vietnamese vegan summer rolls are healthy, fresh, super tasty and easy to prepare with all kinds of colorful vegetables. Serve these rice paper wraps with a creamy peanut sauce as a dip and you have a delicious and light dish for lunch or dinner!

Ingredients (2 portions):
200g tofu
2 small pak choi
1 spring onion
2 carrots
100g rice noodles
1 tbsp sesame oil
1 cucumber
1 handful of pecan nuts
1 avocado
10 sheets of rice paper
For the sauce:
75g peanut butter
3 tbsp rice vinegar
2 tbsp soy sauce
1 tbsp agave syrup
1 tbsp Sriracha chili sauce
1 tsp sesame oil
1 tsp salt
Preparation:
- First wash the vegetables and cut into thin strips and chop the pecans into small pieces
- Next, cut the tofu into small strips
- Now steam the carrots and pack choi over a pan with a little water
- Then fry the tofu in a pan with a little olive oil and cook the rice noodles in boiling water for 3 minutes
- When all the ingredients are ready, leave the rice paper to soak briefly in a plate filled with water and then gradually add all the ingredients to the bottom third of the paper
- Then fold over the edges and roll up the sheets with light pressure
- Finally, mix all the ingredients for the dip and season with salt to taste
- Serve on a plate and enjoy!

Summer rolls are an appetizer of the Vietnamese cuisineare called "Goi Cuon" in Vietnamese and, unlike spring rolls, these rolls are served not deep-fried. The preparation of summer rolls is really easy and anyone can make the versatile colorful rolls to your heart's content. Thin rice or glass noodles, crunchy vegetables, salad and fried meat, fish or prawns are popular. However, we prefer to fill the rolls with vegan with crispy tofu - so delicious!
Everything about the rice dough sheets
Rice dough sheets for summer rolls can usually be found in the Asian section of the supermarket or online. There are different shapes and sizes. We usually use the round rice dough sheets with a diameter of approx. 22cm. As each rice paper is only about 30-35 calories together with all the colorful and healthy vegetables, it is a real low-calorie dish.
Before rolling, the rice dough sheets briefly soaked in warm waterbecause they are very hard when dry - you can usually find the instructions on the packaging. However, make sure that the rice paper not soak for too longbecause if the rice paper becomes too soft, you will unfortunately no longer be able to work with it.
