Ingredients (1 cake)

  • 200 g almond flour
  • 50 g coconut flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 3 medium carrots
  • 3 eggs
  • 100 ml unsweetened almond milk
  • 60 ml coconut oil
  • 80 g erythritol powder
  • 250 g low-fat cream cheese
  • Juice of one lemon
  • Chopped pistachios

Preparation

  1. Preheat the oven: Preheat the oven to 180°C fan oven.
  2. Prepare the dough: Mix all the dry ingredients together in a bowl. Add half of the erythritol powder to the batter and keep the rest for the frosting.
  3. Add the liquid ingredients: Add the almond milk, coconut oil and eggs and mix everything into a smooth batter.
  4. Add the carrots: Peel the carrots, grate them finely and fold them into the batter.
  5. Bake: Pour the batter into a prepared cake tin, smooth the surface and bake the cake in the oven for 30-40 minutes.
  6. Prepare the frosting: While the cake is baking, mix the cream cheese, remaining erythritol powder and lemon juice well and place the mixture in the fridge.
  7. Decorate the cake: As soon as the cake has cooled, spread the frosting from the fridge onto the cake. Finish by garnishing with chopped pistachios.
