Blueberry chia pudding is a healthy and delicious pudding that is perfect for a quick breakfast or a snack. It is rich in fiber, protein and antioxidants, which provide your body with energy and boost your metabolism.

Ingredients (1 portion):

2 tbsp chia seeds

1/2 cup oat milk

4 pitted dates

200g fresh blueberries

measuring spoonLiveFresh Protein mix - vanilla (optional)

Yoghurt to garnish

Preparation:

  1. Place the dates, blueberries and oat milk in a blender and blend until smooth. If using the protein powder, it should also be added at this stage

  2. Now add the chia seeds and stir well

  3. Then pour the pudding into a bowl and place in the fridge for at least 30 minutes to allow the chia seeds to swell and create a pudding-like consistency

  4. Before serving, add a handful of fresh blueberries and garnish with yogurt if desired
