Vegan Buddha Bowl with Tafini dressing

This simple Mediterranean Buddha Bowl is full of colorful vegetables, fresh salad, healthy quinoa, protein-rich chickpeas and a creamy tahini dressing. A great nutrient-rich rainbow veggie bowl with fresh ingredients for the perfect preparation for your juice cleanse.

ingredients (2 portions):

150g quinoa

100g chickpeas

250g broccoli

200g carrot

1 handful mung beans  

200g smoked tofu (optional)

200g green beans

½ avocado

1 pair of fresh vine tomatoes

½ sweet potato

For the dressing:

¼ cup sesame paste

2 tbsp lime juice

1 tbsp sesame oil

½ tsp sea salt

1 tbsp date syrup

A little water

Preparation:

  1. First prepare the quinoa according to the packet instructions
  2. Wash and cut the zucchini, carrot and beans
  3. Now steam the vegetables until they are firm to the bite
  4. Cut the sweet potato into thin slices, place on a plate and microwave for approx. 2-3 mins. Then turn the sweet potato slices and microwave again for 2-3 minutes
  5. Meanwhile, mix all the ingredients for the dressing and stir well
  6. Now fill the bowl with the quinoa
  7. Top with the vegetables and the other ingredients
  8. Finally, pour over the tahini dressing and garnish with a little fresh chilli
  9. Enjoy your meal!
