Beet carpaccio

Finely chopped Beet carpaccio with arugula, goat cheese and roasted walnuts. Wonderful colors, earthy and at the same time lemony fresh with the walnut dressing. The carpaccio is also perfect as a snack before and after your meal. juice cleanse.

Ingredients (2 portions):

1 large beet (cooked)

40g rocket

50g goat's cheese

20g organic walnuts

For the dressing:

2 tbsp olive oil

1 tbsp walnut oil

1 tbsp lemon juice

1 tsp agave syrup

½ tsp Dijon mustard

½ tsp salt

1 pinch of black pepper

Preparation:

  1. First mix all the dressing ingredients in a small bowl and season to taste.
  2. Now cut off the remaining hard parts of the beet if necessary, then slice into wafer-thin slices using a vegetable slicer (finest setting).
  3. Next, wash and drain the rocket.
  4. Now briefly fry the walnuts with a little agave syrup in a pan.
  5. To serve, arrange the sliced beet in a circle on the plate, pull a handful of rocket through the dressing and drape in the middle of the plate.
  6. Finally, garnish with the goat's cheese and roasted walnuts, drizzle over a little dressing and enjoy!
