Vegan avocado spaghetti

Ingredients (3 portions):

For the pesto:

1 avocado

1 garlic clove

2 tbsp olive oil

1 handful of basil leaves

Also:

300 g spaghetti

Handful of cocktail tomatoes

50g Parmesan cheese

1 packet of pine nuts

salt and pepper

Preparation:

  1. First cut the avocado in half, peel and puree together with the garlic, olive oil and basil to make a pesto
  2. Now cook the spaghetti in salted water according to the packet instructions
  3. In between, lightly toast the pine nuts in a pan
  4. Now halve the tomatoes and add to the drained spaghetti in the pan with the pesto and pine nuts and mix everything together
  5. Finally, arrange on a plate and sprinkle with a little Parmesan cheese.
  6. It's ready!
